Aroma Chemicals

Aromatic compounds are a class of important molecules that are used as raw materials in flavors and flavoring ingredients.  Aromatic chemicals are made up of natural, naturally identical, and artificial molecules.  Natural products are obtained directly from plant or animal sources through physical processes.  A naturally identical compound is synthetic but chemically identical to a naturally identical compound.  Artificial flavors are compounds that have not yet been identified in animal and plant products for human consumption.  About 3,000 different molecules are used in the production of flavors and fragrances.  In contrast to natural molecules isolated from relatively limited natural resources, synthetic ingredients play a major role as ingredients because they are readily available and relatively inexpensive.  The smell of individual compounds is difficult to describe.  Complex mixtures are usually impossible to describe unless an ingredient has a very typical smell or flavor.  Terms describing smells are given.  The general production route of these spices was introduced.

These production routes are usually through separation from natural sources, petrochemicals, feedstocks, or synthesis using rings and aromatic precursors.  Including economic data and analytical methods.
